The PS5 controller is mind-meltingly better than the trash Xbox controller. It doesn't click and rattle like every Xbox Series X|S controller. It actually has real haptic feedback, not just rumble. The weightiness makes it feel more solidly built. And the symmetrical stick placement is the number one reason it's better to me.
The UI is better on PS5 than on Series X, which has the same boring, unintuitive UI as Xbox One. PS5 has an easier-to-use party system than Xbox. Trophies are way better than achievements. I could go on. These are just the differences that come to me off the top of my head. One thing Xbox currently does much better than PS5 is load last-gen games.
The xbox controllers have been better since the 360 era. The offset sticks feel so much better for movement and they just fit the hand far more naturally. The triggers also feel better than Sony's, which feel more like paddles. I know it's also not technically ergonomics, but the track pad on the PS4 and PS5 controllers is awful.

Even the og x1 UI was a lot better than PlayStation’s when it had the different screens. I should hope so for a company who's specialises in making software, OS's at that. The Xbox OS is also a lot older than the PS5 so has had a lot more iterative refinement.
